Sooji-narkel-r puli


Hi friends !

Desserts are an essential part of all Indian palates. Here I present a simple and tasty recipe "Sooji-narkel-r puli" that translates into sweetmeat made of semolina and coconut....

So, let's get going !!!

Ingredients

1) Sooji/Semolina 2 tbsp
2) Grated coconut 4tbsp
3) Condensed milk 150ml
4) Full milk 1lt
5) Sugar (preferably brown)
6) Crushed cardamom 2pods
7) Pista for garnishing

Method of preparation

1) Take sooji in a pan and lightly roast it. Be careful not to overdo it.
2) To it add the grated coconut and lightly stir for a while on low heat.
3) To it add the condensed milk. Keep stirring.
4) Add sugar to suit your taste. Mix well to prepare a dough of suitable
consistency to prepare the pulis.
5) Remove from flame and prepare the pulis of desired shape
and leave it aside to cool.
6) Boil milk in a pan. Add the crushed cardamoms and some pista in it.
Boil till it is reduced to half the original amount.
7) Add sugar to taste.
8) Lower the flame and carefully add the pulis to the milk and simmer for a couple of minutes and remove from flame.
9) Garnish with pista and leave it for a couple of hours in the
refrigerator.
Take out 15 minutes before and serve.

So, here you are...yumyum delicious dessert ready to serve.

Dahi Vada


Hi Friends,
Time for some yum yum yummy side dish.....

So, get going....

Ingredients

1) 1 cup of urad dal
2) 1/4 cup of rice
3) Yogurt or dahi
4) Tamarind sweet and sour chutney
5) Tomato sauce
6) Roasted and ground cuminseed and dry red chillies
7) Chat masala (optional)
8) Salt to taste
9) Oil for deep frying
10) 5-6 Curry leaves, 2 dry red chillies
11) A pinch of black mustard seeds

Method of preparation

1) Soak urad dal and rice overnight or atleast for 5-6hrs.
2) Grind the soaked dal and rice in a mixer to a proper consistency to prepare round vadas. Do not add too much water during grinding.
3) Take the batter, add salt and whip it in circular motions for a while.
4) Take small portions and deep fry in oil.
5) Remove from oil after the vadas attain a golden brown colour and transfer them in a bowl containing water.
6) Let it soak for about 10 mins.
7) Prepare dahi in another container. Whip the yogurt, add salt and chat masala to it and keep it aside.
8) Take the vadas out from the water and gently squeeze out the water holding them between your palms and pressing them.
9) Put the vadas in the yougurt and let it soak.
10) Take a small frying pan, add 2 teaspoons of oil. Heat the oil, add mustard seeds. When the mustard seeds start to splutter, add the curry leaves and red chillies. Stir for a while.
11) Add this tadka to the prepared dahi vadas as garnishing.
12) Finally sprinkle the roasted and ground cuminseed and red chilly powder and chat masala on top.
13) Add the tamarind chutney and tomato sauce before serving.

Delicious Dahi vada is ready to serve.

Diet Chicken (oil free recipe)


Hi guys ! this is an awesome recipe for all those worried about their extending waistline yet cannot keep their hands off a delicious (full of fat !!!) platter......

Here you go ! Easiest recipe ever !!



Ingredients

1) Chicken breasts 300gms (chicken breasts are a good source of protein!)
2) 1 medium sized onion (grind to paste with little water)
3) 1 medium sized tomato (pureed)
4) 1 teaspoon ginger paste
5) 1 teaspoon garlic paste
6) 1 teaspoon red chilli powder
7) 1 teaspoon turmeric powder
8) 1 teaspoon cumin powder
9) 1 teaspoon coriander powder
10) 1 teaspoon garam masala powder
11) Salt to taste and a pinch of sugar (optional)
12) Green chillies and coriander leaves (optional)

Method of preparation

1) Cut the chicken into 1 inch chunks.
2) Wash it and leave aside
3) Take the cooking utensil.
4) Put in the chicken and add all the above ingredients into the chicken. Mix well and
    leave it aside for half an hour.
5) Put the marinated chicken to cook on flow flame and covered.
6) Keep a check to see if the chicken dries up. If so, add a little water. Do not add too much water as it is a semi-dry dish.
7) Cook till the chicken becomes tender. It does not take much time to cook.
8) Dice the green chillies and add when the chicken appears nearly done.
9) Add chopped green coriander for garnishing (optional)

You can add diced capsicum to the recipe. It adds a distinct flavor to it.

Can serve with steamed rice, fried rice and even tomato rice.

Chicken Biryani


Hi friends & all those biryani lovers,
Here I present a simple yet lip-smacking recipe of chicken biryani.

Get set & go !


Ingredients


1) 300gms Basmati rice
2) 500gms chicken( I prefer a reasonable amount of meat)
3) 250gms Onion
4) 2 tbspoon ginger-garlic paste
5) 100gms curd/natural yogurt
6) 2 tblspoons of Kewra and Rose essence, 1 drop Mitha attar
7) Kesar colour/a few Saffron strands
8) Eggs
9) Potatoes
10) 10 tblspoons of cooking oil (amount can vary depending on how much diet conscious you are !)
11) Whole garam masala, 1-2 bay leaves, 2-3 black cardamom
12) Salt
13) Sugar
14) Aluminum Foil
 
TAKE ONION EQUAL TO THE CHICKEN SAME AMOUNT OR LITTLE MORE.

1.Soak basmati rice for 45mins to 1 hour.Then boil the rice with SALT,1 bay leaf, 2 cloves, 2
cardamon, and  cinnamon boil till more than HALF done.Immediately strain and take it on a plate
and let cool off under a fan.

2.Pressure cook or boil the whole peeled potatoes till
ALMOST done. Do not boil it completely.

3.Boil the eggs and keep aside.peel and prick with a fork,keep aside.

4.Make a ginger-garlic paste.

5.Peel and chop finely 2 big onions.

6.Now heat refined oil in a pan,add finely chopped onions keep stirring till it turns
nice dark brown (do not burn the onions).

7.Take a small bowl of 100gms curd. Add sugar to it and then add the fried onions to it. Mix it
and keep aside.

8. Take chicken pieces and marinate in the above mixture along with 1tsp of kewra and 1tsp of rose essence.
Leave for sometime.

9. Take a pan with oil, add the ginger-garlic paste saute for 2-3 mins.then add marinated chicken and stir
in between till done.once it leaves its oil add chilli powder and salt.
The chicken is ready.

10. Now add a pinch of the kesar colour to the peeled potatoes and eggs and lightly fry them in
a pan. Remove and keep aside.

11. Now in a bowl take some milk add a bit of sugar, kewra
essence, rose essence mix it with a spoon and keep aside.(try to get some color by adding
kesar colour or kesar dissolved in warm milk).

12. Pour this mixture into the cooled rice. Add 1 drop of mitha attar and mix well.

13. Take a large container , add a layer of the rice and top of it add eggs, potatoes and the chicken. Repeat it for 2 layers.

14. Take a pan, add oil generously. Add a bay leaf and the black cardamoms. Heat the oil and pour the whole thing on the rice and chicken layers.

15. Cover the container with aluminum foil and put in the microwave at 300W for 5mins.   OR put the covered container on a heated tawa.

16. Remove from the microwave and mix the contents well before serving.
     Add some fried onions on the top while serving.

Green chillies optional !
